It saves us costs and energy in refrigeration because oat milk can be stored unopened without refrigeration, unlike dairy milk. We serve oat milk based beverages as a default and up-charge for dairy, flipping the script on the traditional cafe approach to espresso and milk drinks. We wanted to minimize the barrier between customer and barista, as we find it creates a different attitude and conversation in the cafe. The coffee bar itself was designed to be transparent, offering a look inside the machinery. All these pinkish, papaya and peachy hues shine right through the coffee bar, which is made entirely of glass and contains two Modbar group heads and steam wands with custom heat-resistant plexiglass tops for the modules that live under the bar. The seating is within the actual coffee bar, which is composed of beautiful, pink and cream terra-cotta tiles and soft hues that compliment it. ![]() This cafe is a space that juxtaposes high end, handmade beverage service, enjoyed in-house, against robotic made to-go drinks. The building was formerly a cheese factory, and our cafe is located in the old milk receiving bay. Īs a third wave coffee shop, 7 Corners Coffee is proud to serve Onyx coffee and share their story with the Twin Cities community. This allows you to see what was paid for it, how it was scored, who they bought it from and more. To ensure transparency, they include pricing and trade data with their coffee. This reduces harmful runoff and protects natural water supplies. This includes things like buying organic fertilizers rather than synthetic ones, as well as purchasing coffee that is natural or honey processed. In addition to environmental initiatives, they make sure their farmers are paid fair wages while also helping them to use more sustainable methods of farming. Onyx works hard to promote transparency and a sustainable coffee economy. Unlike traditional coffee bags that are made from nonrenewable plastic and foil, these bags leave little-to-no footprint. When Onyx does use bags, they use products made from 60% compostable and all renewable film layers. Onyx is a big believe r that quality coffee and great design do n’t have to come at the expense of sustainability. Not only are these boxes better for the environment than traditional plastic and foil bags, but they look cooler too! For a finishing touch, the boxes feature raised and recessed designs. Most of Onyx’s roasts come in boxes made with unbleached, uncoated paperboard produced from recycled materials. When the coffee is ready to go, it’s either served directly in one of their three coffee shops or it’s placed inside of eco-friendly packaging. To ensure quality, a sample is taken from every single roast and cupped to ensure quality and flavor. ![]() This allows their roastery to be completely carbon neutral. The coffee itself is roasted using solar energy that’s gathered from the roof of their facility. In their own words, Onyx seeks “quality, truth and accountability in coffee.” They do so in a number of ways.
